This makes sense.

You might be missing the fact that there's no real need to demarcate the 
two sockets in each room as one for phone and one for data.

The only gotcha I can think of is where to put the capacitors- i.e. the 
components that you find in the back of a "type 2" phone socket.  I am 
unsure if they are needed at each point, or whether a single one in the 
middle, with all sockets connected as if they were extensions would be 
best.  I chose to fit the equivalent of a 'type 2' socket at each point.  
Beware!  The PABX adapters (RJ45 to BT style socket) are not wired 
correctly for New Zealand home installations.

I have done exactly what you are doing at home- email me off list for 
interminable amounts of excruciating detail.
