In Short... Centre Pair on the connectors is Phone.
On the Clipsal Cat 5e system that I just installed in my place it is the Blue Pair. I have a 24 port pannel in my server room (the Attic) 21 ports to the 21 outlets through the house, the remaining 5 only have the centre pair connected direct to the Telescum termination point. With the phones - cut off the BT connector and crimp on a RJ45 making sure the centre two wores from your phone are actually in the centre. Make some patch leads and patch it to the port you want to use. Note: This only works with phones labeled as "2-Wire" if you are wanting to use the old "3-wire" phones then you can purchase a proper RJ45 to BT adapter that has the capacitor and resistor in it. All works well. P.S. Use the proper crimping tools! Mike.
