You'd have to use ucLinux and compile all your apps to locate them correctly. If you want to run real linux on an embedded system, make sure the CPU has an MMU & that way mainstream linux and its applications will run and compile with very few hassles. I would personally suggest an ARM9 or ARM Xscale chip - but I particularly like ARM, so I am bias :)
