Not sure which module exactly uses video=, but it's obviously a setting
specific to the radeon frame buffer device.
Info grub isn't very much help, as is:

I've checked, and my kernel has all frame buffer devices as modules
(none loaded), except for vesafb, which is compiled in. That's the one
to zero in on then.

Just the 1024x768 matters.
Don't count on that quiet yet. CRTs would be expected to deal with
anything between X and Y, I'm not totally convinced projectors aren't
only dealing with a number of *discrete* frequencies between X and Y.
The manual and advertising guffs would naturally be misleading about
this.

This does indeed suggest a number of discrete frequencies only. Try 65Hz
and see whether it's black-out.
You and the projector manual are correct, I'm sure. So we'll leave this
test till the meeting, if you want to bother.
But is there a frequency in that range that you can use?
And can Barry please tell us what frequency his display is set to? -
Because that was 'plug & play' @1024x768.

Yeah well like I've been saying. vga= is a setting for the vesa frame
buffer device, and it sets the console's resolution, number of characters
(by way of console font size), and probably the refresh rate too.
I've seen no change from setting this value within grub, either
defoptions=vga=791 or 793. Maybe I'll try just vga= next.

Well, I can see who's been on the plonk here, but then it's not my first
language...
Never more than a glass or a can in one sitting (Xmas might be two), and
occasionally once or twice in a week. But I take the point.
