as always you have choices.

apt-get or its gui front ends will do the job well, updating your
grub/lilo and installing ancillary packages as needed.

download and compile your own will muck up dependencies and associated
packages (perhaps) but is likely to get a more recent version.

I'd stick to the ubuntu packages via apt-get and friends if I were you. It
is always best to stick with your distro's packages unless there is very
good reason not to.

The package for the kernel is called linux, which seems to be a wrapper
for linux-386, linux-686 etc. In dapper it appears to be stuck at 2.6.15.
