I use dual NICS in servers for work.  This is because often times I need
to do large data transfers during the day, the NIC that the internal
network clients use can continue to serve clients at full speed and the
other NIC is used for all internet (in/out)bound traffic for the server.

Or, if the machine may ever serve as a router, two nics is the best way
to go.

BTW, my bet, for a business server would be 1 choice : 3com 2nd choice
Intel.  Compared to cost of the rest of the machine, a good nic with a
lifetime warranty comes in pretty cheap.  That whole penny wise, pound
foolish adage applies well here.
