Personally I don't trust Google (or others) enough to handle my email, for both privacy and continued access reasons. Everyone has to make their own choice in that regard though. I email servers for our business and others in a Auckland datacentre with backups being pulled locally and to a server in the US. I don't find it an administration burden, though I do take time initially setting things up to be pretty automated on our servers. Something that may be of interest as an in between option is http://25mail.st/ - provided by RimuHosting, who are a local and well respected business. Of course this doesn't mean that your mail is going to be in NZ still.
