Yep, Androids also support creating a WiFi hotspot.

Both iPhones and Androids also support actual tethering with a cable. I just plugged my S3 into a Linux machine (and enabled USB tethering) and it showed up like an Ethernet device using the cdc_ether driver. Run a DHCP client on it and away you go. On a Mac apparently the driver here http://joshuawise.com/horndis will make it work.

With iPhones USB tethering should just work with a Mac, although my quick try a few minutes ago it didn't, go figure. This site http://www.howtogeek.com/68999/how-to-tether-your-iphone-to-your-linux-pc/ suggests with some extra software (might already be installed, depending on your distro etc) iPhone USB tethering also works on Linux machines.

If you only want to share with one computer at a time then USB has the benefits over WiFi of providing power to the mobile device and doesn't have any of the interference issues that WiFi can have.
