I just hit 'File | Save As | File' in Thunderbird... simple as can be.

I don't have a huge pile of 'mission critical' email, but I do a fair 
amount of buying and selling, and do things like pay my utility bills 
on-line, and some other stuff, like saving my bank statements (not 
email, but I send them to the same place in my directory tree, which is 
a Samba share, which makes it easy to mirror to my internal file server 
(Win-2k box).

I also leave copies of the emails in Thunderbird for a few months, and 
purge all the stale stuff when I do my quarterlies.
