Gentoo is great for development and if you only have to manage one machine, past that it becomes a pain to support.
There are a few commercial applications out there that really only support RHEL and thus Centos. But I would prefer Debian, not Ubuntu, overall for a server system. And yes, Dino has a good point, don't forget FreeBSD.
