Did you follow Step #7 (reboot or restart networking)? What you’re describing is going to happen if you follow all the steps but that one.

I've tried re-using a /home partition between distros before and it didn't end up well with my DE, so I just backed up, blasted it away, and started fresh. I know that's not the encouragement you are wanting, but I'm at a loss of what it could be. My grasping at straws solution is to set your /home partition to not mount at boot, reboot, and see if you can make those hostname changes again, reboot once more and see if they stick. Not sure how Sabayon deals without a mounted /home. If the hostname sticks and you remount /home and reboot you can be sure it's something in your profile if it changes back to "mint".
