I realized after posting my previous reply that you probably wanted to
know what cfm files where included.  The HTTP sniffer will only help
with things like images and CSS or Javascript included files.

You might consider using an HTTP sniffer.   I'd recommend trying
TamperData for Firefox (http://tamperdata.mozdev.org/index.html).

executed files, if it can be avoided.

I was fixing a bug in a bit of a convoluted application created by
another dev in my company who had recently left the company and
intentionally placed an error in a page where I wanted to track what the
order of execution was to get to that page.  This information can be
found by enabling robust error information or using a try/catch block
and dumping the cfcatch results.
