Another thing that comes to mind is text processing stuff - like lyx/tex/latex. 
Some of those have Windows ports, but might be more mature on the *nix platform.

I'm using the Citrix Linux VDA client to deliver some Linux apps to Windows 
endpoints. That's what I've got to demo.
