Dear Tom,
You should use the latest installer to upgrade to a newer version. The newer installer is aware of all older versions of Little Snitch. To upgrade to a newer version use the 'new' installer and click on the 'upgrade' button. For removing an existing version you can use the corresponding or 'newer' installer.

Or should you uninstall the old version and then install the new version cleanly; and if this is the best thing to do, should you use the old version's uninstaller or is it ok to use the new version's uninstaller to uninstall the old version?
