Well, "make" is a development tool and the options from building the kernel with "make xx" are so named targets defined in the Makefile itself and not from the make itself. They can change and you can query it simple by running "make help". Knowing of one of it like "make menuconfig" for console/vt100 or for GUI: gconfig, xconfig, .. or oldconfig is enough to build a kernel.
