You should not have "bitrot" with NAT, but if you want to get rid of the
second NAT layer, that seems not to be a bad idea anyway.

Correct.

GUI, and the client NFS filesystem.

If you want to connect to an existing client session like "wiretapping"
on a phone line, that can be done by running "x11vnc" on that session.
Then a regular VNC session can be opened which just mirrors the client
display (and optionally, you can even move the mouse etc). I think that
would best be done as LTSP local app, and IIRC, there are previsions for
doing so. Perhaps you find some docs in the wiki?
