I'm doing the same job here. For me it was the simpest way to set the preferences I wanted directly in firefox and then save the ~/.mozilla dir. I use LTSP 5/IceWM. Setting the fullscreen via the normal preferences an then commenting out the command in the xul did the job perfectly here. What I do is to replace the copy of the user preferences for the kiosk every time a Kiosk logs in. What I didn't figure out is how to do a auto-logout after a certain period of inactivity.
