I have found my solution! It does not involve LDM_SESSION in lts.conf.
Instead, I run this command on the LTSP server:
sudo /usr/lib/lightdm/lightdm-set-defaults --session unity-2d
For information, I believe this just sets "user-session=unity-2d" in the
file /etc/lightdm/lightdm.conf (under [SeatDefaults] section).
After running this command, I did ltsp-update-sshkeys,
ltsp-update-image, and reboot server and clients, but these steps may
not all be required.
I still believe LDM_SESSION may be the correct way for LTSP. But I
tried many combinations and never had success. Both "LDM_SESSION" and
"LDM_XSESSION" seem to be "honored" as changing the values will change
behaviors (and often produce errors, if bad values are used). So I
think either 1) we do not know the correct value, or 2) the values are
not passed correctly and/or process correctly by upstream functions.
