There is a product we use called NetOp made by a company called DanWare
that can do this easily. It is meant to work as teacher software, so you
can show how something is done by going through the steps while the rest
of the class watches at their own PCs. 

It can also be used as a remote administration tool as you can
completely take over the students' PC. The part you are interested in is
probably the monitoring mode, it can just monitor the student PC so you
just view their desktop.

There is a linux version but I have only used the Windows version.
