there is "sudo" - works same as usual for root privileges on the fly to
a user account with "Administrative" rights.
Im not sure if you can ssh to a mac pc from a remote location, but im
about to find out right now
you can - there is a firewall (based on *bsd's ipfw) which is
unfortunately turned off by default in Leopard. Enable and customize
it to filter wanted/unwanted access to services like sshd, etc
