Stephen, In our office we use Retrospect from EMC (http://retrospect.com/), it has connectors into different databases, mail and mail and file servers and I think they recently added an agent for VMWare. It can backup to HDD, tape and optical media. You also have options for scheduling, and full or incremental backups
