The side of the street does not count as sanitary conditions. If you absolutely have to eat with your hands for whatever reason, make a habit of always keeping a bottle of alcoholic hand sanitizer or alcoholic wet wipes on your person. Actually, that may not be a bad idea to do even if you do eat with cutlery. If you shake hands, wash your hands at your earliest convenience afterwards, or do that funny wrist-to-wrist not-quite-handshake you Ugandans do sometimes. Oh, and most important of all: Assume that everyone around you is ignorant, and potentially infected, and take caution accordingly.
