Holly being soft, but desirable for its whiteness, you might try for both by grafting a holly head onto a maple shaft. Use a wedge splint joint as seen in classical guitars between peghead and neck. Some V-blocks and a zero-clearance shelf on the band saw might do the trick, with the stock still in square so you dont need V-blocks.
