To answer this in a slightly different way, there is quite a lot of
music out there if you know where to look.  For example, a good friend
of mine has recently made a performer's transcription of the Cantigas de
Santa Maria of Alfonso X cheaply available

It is pretty much a single line.  Then, that was the way it was done. 
It seemed that, when in a group, people would play the harmonies that
were then known (see Mr Duffin's excellent book for ideas).  

So, if you are after "solo medieval lute", then take a four-course lute
(or oud, or whatever), a plectrum (or quill) and start playing the tunes.
