The option es-minimal is included in spanish.ldf since version 5.0 (Feb 2007) Perhaps you have a previous version. As I have logged some other times, spanish.ldf goes in conflict with some issues of some LaTeX packages. In order to avoid these conflicts, the new version of spanish.ldf offers some options for deactivate some default behaviors.
