I think LaTeX is becoming more popular among humanities folks.
Anyway, the things that you described, like margins, etc. can all be set
within LyX, from the layout document and layout paper menus. As far as
getting a MLA-style bibliography, check out
biblio/bibtex/contrib/mla/
on CTAN.
