Everybody is free to decide in which format he wants to work. When the "language lab" is a company they should also be able to accept PDF: For proofreading, I never would use Word as evry change is saved with the file and you don't have control in the end what has been changed by you and what not. The best for such things is to use PDF. The proofreading person can then highlight mistakes or propose changes using annotations. The advantage is that you can decide what changes you want to accept and what not. The profreader cannot edit/change your thesis.
