Which can be bound to any other key or accessed via m-x self-insert or
Insert>Symbols. Outside the US, the literal dollar sign is rather seldom
used.

There is another reason: touch typing without moving hands is not possible
for F1...F12 and rather hard for CTRL on most keyboards.

This very much depends on the other uses. But I agree that the $ ->
math-insert binding should not be made default.
