In my opinion, it's just plain weird for a server to require the
presence of a monitor.
Many servers sit alone in a closet and have zero use for a display.
And, I am talking about sighted users.

The primary server is a 2009 MacBook, (late 2009) and it definitely
requires a display. The mid 2010 versions seem to need it but not
always. My advice to you to be utterly honest would be stick with
what you have unless you have a compelling reason to switch. You'll
lose a lot of the advantages of the MacBook series and other than
additional ports I can't see why you'd want to switch to the Mini
being totally honest.
The Mini is not designed for portability. It is marketed as a
desktop computer. That's why it is logical that it needs a monitor.
