There are three methods I use. the first 2 are unreliable the third I am
afraid is quite unpredictable.
The easiest way I find is simply to press shift VO C which will copy the
last phrase spoken by Voiceover into the clipboard ready for pasting.
Given voiceover normally reads a paragraph at a time this is normally fine.
If I need part of the paragraph I just edit it down in Text edit.
To copy just one word,  just Interact with the text as normal to read one
word at a time and again just press shift VO C again.
If you need the whole page or more than one paragraph  it is normally best
to press command A and then command c to copy the whole page and then paste
that into Text edit  and then sort it out there.

The third method is very precise on what you copy but slightly more
convoluted and does not work in all circumstances.
1. Interact with the text.
2. Press VO enter to start selecting.
3. Move the cursor keys to select what you want.
4. Press VO enter to stop selecting.
5,   Press command C to copy to the clipboard.

This will not work in the following circumstances.
1.You are restricted to selecting text within one paragraph.  Given that
restriction it is I believe more logical to use Shift VO  C to copy last
phrase spoken as this achieves in one keystroke what you need to do with 5
keystrokes  using this Vo enter method.
2. I find it will not work with some web elements no matter what I do. For
example I find I cannot select text in some header elements. Again shift VO
C comes to the rescue here.
3. For some reason I cannot fathom, on some occasions and on some pages, it
simply will not work at all. I think this aspect of Safari with Voiceover
needs a major work over and to be frank I have stopped using it  in favour
of the shift VO C method.

Its swings and roundabouts, the shift VO C command is useful across the
system , not just in Safari and it is one of the commands I miss if I have
to go back to use Windows to do some work.
