I've worked out the difference between apps I can copy out of the archive and 
paste in applications or utilities and the more complex apps with there own 
more windows like installers but I've come across a few things I'm ignorant of 
in regard to uninstalation and the like.

When I use open with for media files, I have vlc show up 3 times. 2 versions of 
the newest and 1 previous version. The previous version is in the trash but is 
still showing up in open with. How can I get rid of the duplication and older 
version and I guess, is there a method of uninstalation of basic apps like this 
and or the more complex apps? 

Also, I here that you can move apps to different folders etc but that since 
lion this isn't a good idea and esp now that the app store has come along. What 
if any of this is true or relevant?

I've looked but can't find where to set default actions for file types. Where 
do I set default programs to play certain file types and, please tell me there 
is a way I can stop iTunes from playing every media file I download 
automatically.
