Hi Kate, I'm only getting started with these tools myself Anne Robertson is probably one of the list experts on this and will know better.
The answer is that you can scan and recognise with ABYY but it's slow. What a lot of us (I think it's not just me) do is if we have a lot to scan, we just scan with Vuscan and then pass the recognition off to ABYY.
