Phil covered selecting columns and rows comprehensively. As for VoiceOver still 
announcing hidden columns, this is only if you use the VO keys to navigate. If 
you just navigate using the arrow keys alone, as is generally the better 
option, then VoiceOver will only announce the visible rows and columns. This is 
the same when you filter your tables: navigating with VO keys will not appear 
any different, but if you navigate with the arrow keys alone you’ll only see 
the filtered rows and columns. Using VO keys to navigate can get you into 
mischief as the VoiceOver cursor selects invisible cells, but the keyboard 
cursor does not, and this can lead to undesired results.
