MacOSX 10.3 is not supported with OpenOffice.org 3.0.  Maybe you meant to say:

MacOSX 10.4 versus 10.5. 

There is a noticable performance improvement when running with 10.5 (Leopard) 
from what I gather.  Since I've moved to an Intel Mac with Leopard, programs do 
appear to run faster/better.

There is a Java based component for OpenOffice.org.  However it builds against 
an older version of Java (1.4/1.5) rather than the latest version, 1.6.

I, like you, would not state that OpenOffice.org 3.0+ is not usable on a 
PowerPC Mac.  However, there will be the time when we will have to make the 
decision to no longer support this platform.  Fortunately, that day is far away 
for now.
