I found a workaround: remounting and adding the -s flag (which
disables multi-threaded operation) allows the iTunes import to
complete successfully. It is difficult to say how much of a speed hit
I take as a result of this, but at least it is now working. So it
seems that I can complete the iTunes import using -s, and the remount
normally for all other tasks.

If I can ever get MacFUSE and sshfs compiling properly, I'll tackle
the multi-threaded crash in more depth. But for now this workaround
seems pretty good.
