I too am getting the same error. For me this started when I upgraded from 10.4 to leopard. I had only a few days before just updated to the latest version too.
I tried the uninstall script, but all the key files are missing, there is no longer a fusefs.fs directory, so I can't run the uninstaller. I have tried re-running a fresh MacFUSE-2.0.dmg package to no avail, as well as an autoupadte from the system preferences, both fail with the same logged error messages.
