There are many programs that you can use to create a bootable  
firewire backup (Carbon Copy Cloner , for example).
But lately, i've just been using OS X's built in Disk Utilities  
(Applications > Utilities).

Click on the restore tab, select your main HD in the "Source" field,  
and your external HD in the "Destination" field and click restore.  
(Make sure that your firewire drive is empty, and that you have  
enough space to back up your entire main HD)

to boot from it, just hold down the "Option" key during normal boot- 
up, and select the external drive.
