I have been going to the terminal and typing - chmod 644 *.pdf-, which takes care of the problem quickly enough, too. I'm really confused that changing the layout changes the permissions. I'm guessing that some temporary file gets made which is set to the bad permissions, and then the bad permissions persist as the temp file gets moved.
