I have the new Toast 8, and it makes recording a snap. I have recorded some of my old tapes (my turntable is keput) and used Spin Doctor (which comes with Toast). After making the recording, it will transfer the indivual tunes directly to iTunes just by pressing a button. It is super simple and only takes a few seconds to transfer to iTunes after you have recorded the songs.
