Two utilities that I don't really think of as programs, but as part of the environment are Quicksilver and TextExpander. I'm so used to having them there that using a Mac without them seems somehow incomplete.
The program in which I spend the most time is undoubtedly TeXShop, a free (La)TeX front end. Most of my writing is done there. After that, in no particular order come Mathematica, Eclipse, NeoOffice and BBedit.
All nine programs are active on this machine right now.
What application interests you most that you would consider buying at some point?
PDFPen because I occasionally have the need to rearrange and trim PDF files.
