Jane,

In Apple's email all you have to do is go under "file" and click on "save" and the email is automatically saved as a text file. Easy as that.

The file will be saved to whatever location you want be it the desktop, a folder on the desktop or inside the documents folder. Since you use Thunderbird I can't specifically help as I use Apple's mail and I wanted you to see how easily the problem could be solved for you.
