The settings I'm trying to change are the specific printer settings, such as 
paper size, color, etc., that are found within the Default Settings for each 
printer, not which printer is the default one.

And … I found instructions on how to do what I want at 
https://discussions.apple.com/thread/4094827?start=0&tstart=0, but it appears 
that my printer does not offer an option to change the color setting, which is 
what I want to do.
