Mail>Preferences>Composing>Send new messages from [email protected] which is what I want bit am not getting.
HOwever, not having done anything to junk mail filtering today, seems to have improved Mail's trapping junk mail, that is mail that I have previously marked as Junk. Not perfect but MUCH improved.
