FYI App Delete by Reggie Ashworth is a wonderful program for uninstalling Mac applications. It costs about $8.00, but it's well worth it. It digs deep into your computer and deletes, not only the main application, but all the attending files as well.

It looks like you can delete the non-essential Apple programs like GarageBand and iMovie. I don’t know if deleting them keeps the updater from notifying you of updates. I’ll just have to try that on a couple of machines and see what happens.
