Most people that run mail servers have a real domain. AFAICT, the core of your issues are related to DNS. Until you get that part sorted, you are going to continue to have problems. There are ways to do it without a FQDN. Take a look here: http://www.postfix.org/SOHO_README.html and http://www.postfix.org/BASIC_CONFIGURATION_README.html But you're still gonna need to have DNS setup properly. As others have pointed out, you really haven't defined your goals enough for anyone to really be able to help effectively.
