No, but you can put a custom desktop image on each desktop.

You can do that.

No, you can pin an APP to all windows, but not a specific window. However, 
Actiity monitor only has one window, so that should be fine.

Full screen apps with multiple documents open (like Pages, for example) are 
multiple full screen ‘desktops’, however, you cannot group by desktop.

You can position the player window where you want and set the app to all 
windows, but this will not give you access to under the video playback.
