I always think it's better to learn on the latest OS as that's what will be on any new Mac. Things have changed quite a lot since Snow Leopard and the new Pages is very different from the old version. VO commands have changed and there are more of them. I can't remember whether Quick Nav existed back then, but it has also evolved since its beginnings.
Language support has improved out of all recognition which is something I really appreciate as I use two languages all the time. I'm sure that Activities weren't in Snow Leopard, either.
