Well, when you "Add" a new partition, you are shrinking the partition whose free space you are using transparently; this is all handled by the disk management framework in OS X.
To be honest, Disk Utility isn't the nicest tool to use for these sorts of jobs, so if you're up to it, I'd use the diskutil command line tool.
