No, I want to set one of my minis not to synch certain folders. If I delete it I will lose that folder on all of my devices.

If I understand what you are talking about, you can just go into your DropBox folder on your Mac and then do command delete like any other folder in Finder. On my Mac, I can just delete files and folders that way and they sync with my iPhone which I have Dropbox on too.
