I would also add that the newly updated Audio Hijack is great for recording. 
The OP mentioned podcasting, and if that includes recording voice and app audio 
and/or VoiceOver all at once, Audio Hijack is a great way to capture all that 
audio. Once recorded, you can open the sound file(s) in your editor of choice 
(I prefer Audacity, since it's free and I haven't found anything Amadeus does 
better). In short, you'll want a good recording program to capture your audio, 
and if you need multiple sound sources recorded at once, Hijack is great. For 
just one sound source, Amadeus, Quicktime, or any number of other apps can do 
the job just fine.
