I would also add that the newly updated Audio Hijack is great for recording. The OP mentioned podcasting, and if that includes recording voice and app audio and/or VoiceOver all at once, Audio Hijack is a great way to capture all that audio. Once recorded, you can open the sound file(s) in your editor of choice (I prefer Audacity, since it's free and I haven't found anything Amadeus does better). In short, you'll want a good recording program to capture your audio, and if you need multiple sound sources recorded at once, Hijack is great.
